How to Make Banana Pancakes from Scratch

 



Delicious banana pancakes from scratch are sure to brighten any morning (or afternoon, or night...)! They are great with maple or berry syrup and with fresh fruit on top.

Ingredients

  • 1 cup all-purpose flour (sifted)
  • 1 tbsp sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 ripe bananas, chopped or mashed
  • 1 egg (beaten)
  • 1 cup milk
  • 2 tbsp vegetable oil
Optional:
  • 1/2 cup chopped walnuts

Cooking Instructions

 

1. Mix together flour, sugar, baking powder and salt. In a separate bowl, mix egg, milk, bananas and vegetable oil.

2. Stir flour mixture into banana mixture and mix up until there are no dry flour lumps.  If desired, add a small amount of milk to the mix if desired for easier pouring.

3. Heat a greased wide frying pan or griddle over medium heat. Pour the batter onto the griddle to whatever size pancake you'd like. Cook until pancakes are golden brown on both sides; serve hot.


Variations:


Chopped walnuts can be added to the mix for a rich, nutty flavor.

From Scratch Blueberry Pancakes Recipe - How to Make Blueberry Pancakes

This recipe makes approximately 12 delicious blueberry pancakes from scratch.

Ingredients:

  • 1-1/2 cups all-purpose flour (sifted)
  • 2 eggs
  • 2-1/4 tsp baking powder
  • 3 tbsp sugar
  • 3/4 tsp salt
  • 1 cup milk
  • 3 tbsp butter, melted
  • 1 cup fresh blueberries (frozen or canned also okay, but fresh preferred)

Cooking Procedure

 


1.  In a small bowl, beat eggs until well-mixed; set aside. This will be the batter bowl.

2.  In a separate bowl, sift together flour, baking powder, sugar and salt.

3.  Stir milk and melted butter into eggs.

4.  Stir the dry flour mixture into batter bowl; mix up until batter is smooth.

5.  Rinse blueberries in cool water and remove excess water with a colander or by gently dabbing with a paper towel.

6.  Carefully stir blueberries into the batter.

7.  On a hot greased griddle (over medium-low heat), pour whatever sized pancakes you like -- from silver dollar to plate-filler -- and flip when you see bubbles coming to the surface of the pancakes.  Brown lightly on both sides.  If pancakes cook too quickly, lower stovetop heat slightly.

This from-scratch blueberry pancake recipe makes 12 pancakes (more or less if you prefer smaller or larger flapjacks).  Maple syrup and a dash of powdered sugar makes it a real treat.  You can even throw a mint leaf on top if you're feeling crazy.  Enjoy!
