Delicious Apple Cinnamon Pancake Recipe from Scratch!


Who wouldn't love hot, delicous apple cinnamon pancakes for breakfast?  Use this recipe to make everyone at the table happy!
 
Ingredients:
  • 1 3/4 cups all-purpose flour
  • 1/4 cup (4 tbsp) sugar
  • 1 tablespoon baking powder
  • A pinch of fine salt
  • 1/2 teaspoon ground cinnamon
  • A pinch ground nutmeg
  • 2 large eggs
  • 1 1/4 cups milk
  • 1/2 teaspoon vanilla extract
  • 4 tablespoons butter, softened
  • 2 small apples of your choice
Core your apples and then slice them into pieces about 1/2" in size .  Heat a skillet to medium and add butter, then add the apple wedges to brown and soften for a few minutes, turning them to brown evenly.

Whisk the flour, sugar, baking powder, salt, cinnamon and nutmeg in a large mixing bowl. Separately, whisk the eggs with your milk and vanilla extract. Whisk 2 tablespoons of the softened butter into the wet mixture. Add the liquid ingredients to the flour mixture, and whisk into a thick batter. Fold the browned apple slices into your batter.

In a large skillet or griddle over medium-low heat, spread some butter (or oil if preferred) and spoon out batter of desired pancake size.  Be sure to include plenty of apple pieces in each pancake.  Cook until the surface of the pancakes bubble and the undersides are golden-brown (a couple of minutes). Flip the pancakes (adding butter or oil to cook surface as needed) and cook until golden on the underside -- about another minute.

Serve while hot, with warm maple syrup.

For true apple lovers, you can cook extra apple slices in brown sugar and butter and place over the finished pancakes with a dash of cinnamon as a delightful topping.
